The importance of gums in general in food products is  based  on the  hydrophilic  properties of the gums which  effect  the  food structure,  texture and  related  functional   properties.   Gum constituents,  which  are  present  in  most  natural  foods   as additives   that    provide  thickenning,  gelling,  suspending, emulsifying, stabilizing, and film forming properties. Gums  have been  used  as emulsifiers, emulsion stabilizers  and  suspending agents. Since ancient times. All of these properties are  related to  viscosity.  Gums are effective primarily  in   oil-in  -water  emulsions, and the concentration must be high  enough  to have  a marked  thickening effect on the aqueous phase. Though they  have  been  and  are  used as primary emulsifying agents,   they   are considered  to operate principally as auxiliary  emulsifiers,  or emulsion   stabilizers by increasing the viscosity, since a  good primary  emulsifier  must  have  both  strong   lipophilic   and hydrophilic  properties.  Ester Gum or rosin ester  is  the  name generally  applied to the product (triglyceride) obtained by  the interaction or rosin of colophon with glycerol. Other ester  gums may  be  formed by the reaction between resin  acids other  than colophon and alcohols other than glycerol. Ester gum as  normally employed by the surface-coating industry, is the particular ester formed by the interaction of rosin and glycerol.
